Why would I need a Low Carb Diet?

Metabolic Issue: People with diabetes and hypoglycemia may need carbohydrate restricted diets to control their blood sugar levels. Weight Loss: The conveniences of modern life can lead to obesity - sedentary activities in front of the computer or television, plus diets consisting of processed foods that are full of added sugars. Blue Mood: The surge and crash caused by sugary drinks and snacks can cause anxiety, listlessness, and even depression.

Healthy foods

This website offers practical advice for cutting carbs and generally eating healthier, and also consolidates a lot of information about the benefits of low carb dining. The Resources section has links to research data, food companies, and other low carb diet sites. Both the resource links and low carb recipe sections will grow as I find more information.

One of the interesting things I learned in researching the meal plans is that not all carbs are equal. An important distinction is the glycemic index (GI), or how quickly the carbohydrates in food are converted into sugar. Complex carbs have lower GI numbers (the lower, the better) so they avoid the spike in blood sugar that causes problems for so many people. For that reason, there are some carbohydrate rich foods (legumes and barley, for example) that are included because they have low glycemic indices.

Low Carb vs. Gluten Free

Another type of diet sometimes confused with low-carb is gluten free. These two are not the same. One addresses blood sugar and weight loss issues, the other deals with a specific genetic condition called celiac, where the amino acids in certain grains cannot be properly digested and become toxic.
